This rub came to me in a dream I had about Steak and Pirogue… Turns out, it was delicious. Here’s how it goes:
2 Tbsp Garlic salt
1 Tbsp Cumin
1/2 Tbsp Cayenne pepper, or ground red pepper
1 Tbsp Brown sugar
dash of nutmeg
Pinch each of salt and coarse black pepper
1.) I brushed both sides of the steaks (Couldn’t find NY strip, so I got something else, but at the moment I don’t recall what it was… Sirloin of some sort perhaps?)
2.) Stir up the dry rub so that all the spices are incorporated and use your hands to sprinkle it on thick, then press into the meat.
I let the steaks sit and marinade in the fridge for about 6-8 hours. But this can be done an hour ahead of time.
Then I pan fried the steaks, 3 minutes each (we like it medium rare) and voila! delicious steak.
